Development and Aging
The grapes are manually selected from vines of over fifty years in the areas of Rioja Alta and Alavesa in perfect ripeness.
The wine has made a pre-fermentation maceration and alcoholic fermentation under controlled temperature conditions. The maceration time was determined by a daily tasting and analytical control using the optimal time to decide devatting once obtained the desired color and structure.
After fermentation malolactic has aged for a year, with three racking in French oak barrels Nevers and Troncais medium toasted.
Subsequently have been selected by tasting the best barrels and after clari fi carlo, it has been bottled without filtration in order to maintain their natuCrianza characteristics: Aged for one year, with three racking in French oak barrels Nevers and Troncais medium toasted.
