CATA's notes:
- COLOR: garnet red
- NOSE: black cherry aromas.
- MOUTH: this wine is fleshy, well structured with the typical warmth of the Roussillon floors.
Elaboration and aging: Made with Syrah 60%, Garnacha Negra 30%, Carinena 10% from plots that are located on the upper slopes of the Agly Valley. They are composed of gneiss and schist from the Devonian period. The harvest is manual. For fermentation, the grape is entirely de-stemmed. The extraction is only done by drilling the lid. The fermentation lasts 2 to 4 weeks, with daily tastings.
Curiosities:
The Valley of Agly: Terraces in stony soils, with a rich geological background and a climate that man has adopted for their crops. The Rosellon was destined to attract the attention of Michel Chapoutier. Black and brown shale to give the wine a solar touch. Gneiss for minerality and freshness. The combination of limestone and chalk for strength and balance.
