TASTING NOTE
View: presents a color ruby red intense and brilliant, with violet reflections. The tear is dense and persistent
Nose: Predominance of mature fruit highlighting cherry and plum followed by notes of vanilla and cocoa with a background of marked character mineral .
Mouth: Silky and elegant , with soft and round tannins. The acidity is well balanced giving it freshness and length on the palate. the taste is intense with notes of red fruits, spices and toast that persist in the aftertaste.
ELABORATION
The harvest is done by hand and in 200kg boxes. Fermentation is done under controlled temperature in truncated cone tanks, undergoing continuous and short pump-overs. The vatting is maintained while the skin continues to yield noble tannins, performing a slight bleeding. Subsequently, the wine rests for two days before being transferred to a combination of new French and American oak barrels, where it remains for 12 months, after which it rests in the bottle for at least another 12 months.
