ELABORATION
The grapes, 85% Tempranillo, 10% Graciano and 5% Mazuelo, are selected by hand in our vineyards in Rioja Alta. Its colour and structure are obtained by macerating after alcoholic fermentation. Malolactic fermentation gives the wine the right maturity for ageing in American and French oak barrels. Before bottling, it is clarified in the traditional way with egg whites. Finally, it goes to our cellars where it will age under ideal temperature and humidity conditions until the moment it is released on the market. It is aged for 24 months in barrels and 36 months in the bottle before being released to the market.
CURIOSITIES
Visiting the winery's historic cemetery can be an extrasensory experience. Called The Catacombs, this is a gloomy and inhospitable space that gives way to a series of dark tunnels full of mold, in which thousands of bottles of unsuspected ages rest. So mysterious is this particular cemetery that the oldest bottles are protected by an iron fence completely covered with mold. The key that opened it was thrown into the river in a symbolic act more than 30 years ago and has never been opened again.
In 2008, a renovation project was commissioned for the oldest part of the winery, giving way to a new dynamic and functional space for activities around wine. Stone, wood and iron, in respectful union, frame the nerve centre of the winery, revaluing a centenary space that in 2010 won the Best of Wine Tourism award, an international competition of Great Wines Capitals that rewards excellence.
