Preparation and Aging:
The grapes for the production of this white come from a selection of our 9 hectares of white grapes in Torremontalvo planted in 1973. This The vineyard is protected from frost by the small mountain that gives it its name, Barbarroja, and which we selected given its quality for the production of this wine. Glass vineyard located at just over 400m with clay soils that help maintain humidity and pebbles on the surface, facing south and with a slight inclination.
The grapes were picked manually at the beginning of October, somewhat later than usual given the characteristics of the vintage. Manual harvest in 20 kg boxes and quick transport to the winery. We press gently in the presence of the stalk and the must clearing spontaneously 24-48 hours before starting the fermentation, part in concrete and approximately half combining a foudre and new French oak barrels and wine. After fermentation, the lees are worked making batonnages daily at the beginning that we space out over time depending on the tastings. The objective is to give volume to the wine without losing its nerve and liveliness. The wine is filtered before bottling. Aged for 18 months in barrels and 6 months in bottle.
Curiosities:
CVNE was historically known as a producer of red wines but also white wines. In the 50s and 60s, CVNE produced dry whites in its Haro winery, aged in barrels, and without fortification.
The quality of these wines was excellent. However, they were not known, they were not exported, they were not made known, and they fell into oblivion.
We think that the duty of the current managers of CVNE is to rescue these elaborations and make them known.
So Cune Blanco Reserva is reborn.
