CATA's notes:
- On the nose residual aromas of spontaneous fermentation, white flowers, white peach, pear, grapefruit, cream and a touch of smoke.
- On the palate it is delicately flavorful and juicy on the palate and leaves a nice, clean sensation on a long, dry finish.
Elaboration:
- The grapes used to make Haus Klosterberg Riesling come from different vineyards owned by Markus Molitor, mainly composed of slate soils. These vineyards produce fresh and mineral wines.
- The 100% healthy grapes are gently pressed and macerated for several hours with their aromatic skins.
- After maceration, the juice is fermented by natural yeasts in stainless steel tanks and large wooden barrels. Fermentation is followed by aging on the lees, which produces a well-balanced, fruity wine.
Curiosities:
In the mid 1980s Markus Molitor took over the responsibility of his father's winery as the eighth Molitor generation. He wanted to bring the estate's wines back to the golden age of Mosel Riesling, with extremely representative wines from his terroir that can be aged for a long time.
The maxim according to Markus: “Uncompromising meticulousness, manual work in the vineyards and in the winery, and respect for the grapes and the wine.”
