New product
The evolution has been very positive and for three years, we have been making wine and observing its evolution in a nearby winery. Happy with the results, at the beginning of 2006 we finished our own winery and were finally able to make our wine there.
The wine is produced on the “Perales de Valdueza” estate, near Mérida, Extremadura, framed within the Vinos de la Tierra de Extremadura and is the final result of mixing the Cabernet-Sauvignon and Syrah grape varieties.
The estate, which has belonged to Alonso Álvarez de Toledo y Urquijo, Marquis of Valdueza, and to the same family for several centuries, has an area of 18 hectares of vineyards and has been dedicated to the cultivation of vines for many generations.
The winemaker
The father of the child is Dominique Roujou de Boubee. Doctor in Oenology from the University of Bordeaux, Grand Prize from the Amorim Academy for the best oenological research work in 2003, and collaborator with masters of the world of wine such as Jean Claude Berrouet and Denis Dubourdieu in France or Álvaro Palacios in Spain.
The winemaker comments about the wine that "the proportions used each year depend on the final characteristics of the harvests, specifically in the case of this 2006 red, we have not used one of the varieties that we also grow, Merlot."
The vintage
After analyzing the grapes by “Terroir unit” and having thoroughly and repeatedly tasted the berries, the harvest date is set. The objective is to harvest and then vinify each of the terroir units separately, that is, each variety on a given type of soil with the same behavior throughout the vegetative cycle.
The one is harvested manually, in boxes of 15 to 17 kg, so as not to crush the bunches. The boxes are then stored in a cold room at 6º C for 15 to 30 hours. The next day the boxes are unloaded onto a sorting table where 6 people eliminate inferior quality grapes (raised, damaged or secondary clusters), as well as plant remains (leaves and petioles).
Preparation and Aging
The wine is made with 34% of its brother Mayor Marques de Valdueza 2007" and the remaining 66% with what will be Marques de Valdueza in the future but which has not yet passed through barrel.
The wine: 'Tasting Notes'
Visually it presents an intense cassis color with purple reflections. The nose is fruity (strawberry, cassis, blackberry cream), floral and resinous (red pepper), spicy (black pepper and cloves). The attack in the mouth is fleshy and the tannin is silky. It is dense, tasty and with a great balance in which its freshness stands out.
