CATA'S NOTES
- View: Purple with ruby trim.
- Nose: Ripe red fruit, notes of nuts, oak, light smoked and toasted notes, dairy and spicy notes.
- Mouth: Powerful, structured and concentrated, with notable but at the same time elegant tannins, it maintains good acidity and a long finish that lasts over time.
ELABORATION
Varieties: Tinto Fino (81%), Cabernet Sauvignon (7%) and Merlot (12%).
After exhaustive monitoring during the ripening cycle and after a first selection in the vineyard, the harvest is carried out manually in small boxes. The bunches go through a cold chamber and selection table where a second control of the bunch and a third of the berry itself are carried out. A meticulous vatting and separate production in small French oak vats seeks to enhance the singularities of the terroir. The aging takes place in new French oak barrels of 600 liters of extrafine grain for 12 months. For greater protection, the wine contains sulfites. The 2019 vintage of El Anejón was bottled in the spring of 2021.
CURIOSITIES
One of the most well-known and prestigious wineries in Ribera del Duero, Pago de Carraovejas is the dream of restaurateur José María Ruiz, who after opening the famous restaurant that bears his name in Segovia, bought his first nine hectares of vineyards in the municipality of Peñafiel (Valladolid) at the end of the 80s.
