Tasting note:
Color: Yellow gold with copper reflections.
Nose: The nose evokes white peach, pear too but more floral notes like peony.
Mouth: Mineral Champagne, with a light biscuit flavor, creamy, flexible, enveloping.
Preparation and aging:
Vinification of the Blanc de Blancs Signature cuvée Only the juice of the cuvées, that of the first pressing, is used.
Mechanical presses with weak pressure.
Use of gravity in order to avoid transfers, which prevents oxidation.
Minimum use of sulfur. Natural settling.
Alcoholic fermentation lasting about 2 weeks at low temperature.
Subsequent natural and complete malolactic fermentation.
Not filtered. 'Assemblage' – 100% of the wines are aged in vats in order to maintain maximum freshness.
After bottling, the cuvée matures for 2 to 3 years in rhyme. Expedition liquor: 8 g/l.
Curiosities:
The Drappier vineyard extends over 100 hectares and represents the special advantage of the house. Since 1808, our family has been able to select particularly well-exposed and extremely calcareous plots, mostly located around Urville, where Pinot Noir, for the most part, finds its most beautiful expression and allows us to produce very elegant aromatic wines.
