Development and Aging
This wine has been made exclusively from grapes harvested in vineyards own Family, Variety 100% Tempranillo and manufactured in our facilities.
The harvest began the first week of October. The grape has reached the very healthy cellar with excellent color parameters and maturity.
The grapes for this wine are harvested in our vineyard Fuentenarro, 23 years old, Tempranillo, at a height of 804 meters, on a clay-strong soil that retains moisture in the soil, even in dry periods of extreme heat.
We proceed to the fermentation of natural and controlled temperature. After the fermentation the wine is moved by gravity to the winery Subterranea, where it rests for 4 months in American oak barrels Quercus Petreae. Served their time in barrel, proceed to the homogenization of the game and make a smooth filtration to remove sediment possible natural wine, later to be bottled by gravity to keep intact the qualities of wine
