Development and Aging Basically made with Tempranillo grapes and some contribution from other varieties such as Albillo, Garnacha or Bobal, all grown under organic principles. The unstemmed grape clusters from vines between 35 and 60 years old are trodden underfoot, subjected to a long maceration process and all ferment together, respecting ancestral traditions. Afterwards, they undergo malolactic fermentation and subsequent aging for 19 months in oak barrels.
Curiosities: Dominio del Aguila is a Winery of
Jorge Monzon, who with his wife
Isabella Rodero They make different wines. After his time in France (the Romanee Conti) he returned to the Ribera del Duero where he met a new perspective of Nacho
Arzuaga for the wines of the winery and meanwhile he was buying plots with old vines in glass (it is important that the vines continue in glass) that he cared for and sold the grapes to the best in the area. A small winery that makes some of the great wines in the area.
Each vine is taken care of so that it expresses the land where it grows, including white vines that enter, and the elaboration is taken care of so that nothing is false, “it doesn't even have a stemmer” says Luis Gutiérrez (The Wine Advocate - Robert Parker taster) of the winery that declares as "the smallest in the world" .
