Development and Aging
older plots of the estate of around 50 years are chosen. The grapes are harvested by hand and placed in boxes of 16 kg which are transported to the winery located among the vineyards. After de-stemming and crushing, the grapes are carried stainless steel tanks where it ferments. The different varieties are fermented separately.
This wine is aged for 12 months in oak, French oak barrels 100% Allier.
