TASTING:

Nose : On the nose we detect the great aromatic complexity of our native grapes, notes of banana, pineapple, a little apple, grapefruit, mango... with a slight touch of dried fruit.
Mouth : Once in the mouth we perceive the character of our grapes... a long wine, it fills our oral cavity expressing everything previously detected in the nose, fine and elegant, fresh and daring... with the personality that gives it a pampered production since its origins.
PREPARATION AND AGEING:
We extract the best quality flower must by lightly squeezing our grapes that reach the pneumatic press by gravity, avoiding organoleptic alterations.
Fermentation at 12º C in 17,000 liter truncated-conical stainless steel tanks.
After choosing plots within our vineyards, all of them with an average age of 20 years, we focus on helping the vine ripen its fruits, green pruning, leaf removal to aerate clusters, use of natural preventatives to avoid diseases... Once we decide the harvest date we do the night harvest, ensuring that the grapes do not enter the winery above 20ºC, in boxes that do not exceed 14 kg in weight. Already in the winery, after discarding the grapes at our selection table, and taking advantage of the gravity of our facilities, we destem and squeeze lightly so that due to its weight the fruit falls into the pneumatic press and there we proceed to extract the must, always in an inert atmosphere. We take this flower must to our small stainless steel tanks to carry out an alcoholic fermentation at a temperature of 12ºC, thus avoiding the volatility of the aromas. The goal is to preserve all the aromas of our native varieties and so that you can enjoy the complexity that they offer and take you back to their origin, which is nothing more than a reflection of our land.
Ideal with all types of fish and seafood, pasta with mild sauce, rice or salads.
