The marc de champagne is a spirit created in the wine region of Champagne in France. The preparation of this liquor in the traditional process involves the selection of pomace, seeds and stems of grapes of the area exclusively specifically grapes Chardonnay and Pinot Noir.
These leftover grapes from the vinification of the champagnes are left for these pomace in the pressing process in the early stages of the production of Champagne. After fermentation the liquor becomes distilled and after this, it is sent to oak barrels where it remains stored for several years before it is ready for consumption.
