Development and Aging
A wine with its own identity, with unique features, a commitment to quality, daily care of the vineyards and the full respect for nature.
This wine has been made exclusively from grapes harvested in vineyards own Family, Variety 100% Tempranillo and manufactured in our facilities.
The grape harvest was the 2nd week of October, the Vineyard San Pedro 35 years old. The grape is very small, perfect for producing quality wines.
This vineyard produces grapes of the Tempranillo variety of high quality because it is protected by pine forests, which protect from frost damage, creating a perfect microclimate for the vineyard. It is situated at a height of 825 meters, on a strong clay soil. the grapes are transferred to the cellar, where we make a long maceration in its own skins, with several manuals daily pumping, then start a25ºC controlled fermentation.
When the fermentation process is complete, it moves by gravity to the winery wine Subterranean, where he remains in American and French barrels for 12 months.
The next step is to homogenize the wine to be bottled and gravity, which keeps them intact its qualities, and store it in the bottle from the cellar for at least one year, for bottle aging period.
