The wines, classified as Protected Designation of Origin Cangas, have the organoleptic qualities typical of traditional wines from the area, in terms of colour, aroma and flavour, with a clean, brilliant appearance and appropriate alcohol/acidity balance. The types of wine covered by the words 'Denominación de Origen Protegida Cangas' (Protected Designation of Origin Cangas) will be as follows:
Varieties: carrasquín, verdejo negro, albarín negro and mencía.
ANALYTICAL CHARACTERISTICS
Minimum natural alcoholic strength by volume: 10% Vol. For "crianza", "reserva" and "gran reserva" reds, the minimum acquired alcoholic strength by volume will be: 11% Vol.
Total acidity (expressed in grams per litre of tartaric acid): It will be between 4 grams per litre and 8.5 grams per litre. Volatile acidity (expressed in grams per litre of acetic acid): It shall not exceed 0.8 grams per litre.
For "crianza", "reserva" and "gran reserva" reds, the volatile acidity (expressed in gr/l of acetic acid): Maximum 1 gr/l up to 11% Vol. and 0.06 gr/l for each alcoholic strength exceeding 11% Vol. Total sulphur dioxide (expressed in mg./l): Maximum 120 mg./l. Reducing sugars: Maximum of 5 gr/l.
ORGANOLEPTIC QUALITIES
Young reds: Visual phase: violet red to cherry red. Transparency: Clean and bright. Smelling phase: intense aromas with floral, fruity, mineral and sometimes balsamic and/or spicy series. Tasting phase: fresh, tasty and balanced acidity.
Crianza", "reserva" and "gran reserva" reds: Visual phase: reddish colour according to the period of ageing in oak barrels supported by the wine, clean brilliant and without particles in suspension. Smelling phase: frank, pleasant and intense aromas without abnormal smells. Taste phase: tasty, balanced and well-structured.
White and red wines must have the organoleptic qualities typical of traditional local wines, taking into account their natural and positive evolution, especially in terms of colour, transparency, aroma and flavour. Those that do not meet these characteristics cannot be protected by the "Denominación de Origen Protegida Cangas" (Protected Designation of Origin Cangas).
